Copycat Ikea Swedish Meatballs

I love shopping at Ikea and no trip is complete without a stop by their food court for some of their delicious meatballs! These Copycat Ikea Swedish Meatballs are quick to make and have a luscious cream sauce perfect for serving over mashed potatoes. A l ittle cranberry sauce (or lingonberry sauce) on the side and you have yourself a perfect copycat.

Ingredients

  • 1 pound ground beef
  • ½ pound ground pork
  • 1 teaspoon onion powder
  • 1 teaspoon garlic salt
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • cup breadcrumbs
  • 1 egg
  • 5 Tablespoons milk
  • 3 Tablespoons butter
  • 3 Tablespoons all-purpose flour
  • 1 cup vegetable stock
  • 1 cup beef stock
  • 1 cup heavy cream

Instructions

  • In a large bowl combine the beef, pork, onion powder, garlic salt, pepper, salt, egg, breadcrumbs and milk.
    1 pound ground beef, ½ pound ground pork, 1 teaspoon onion powder, 1 teaspoon garlic salt, ½ teaspoon black pepper, ½ teaspoon salt, ⅔ cup breadcrumbs, 1 egg, 5 Tablespoons milk
  • Once mixture is all combined roll the meat into small balls, about 1 inch or so.
  • Heat a large skillet over medium heat and working in batches cook the meatballs.
  • You want to cook the meatballs about 8 minutes turning frequently until brown on all sides and cooked through.
  • Remove the meatballs from the pan and set aside.
  • Wipe the pan out and return back to the stove.
  • To the pan over medium heat melt the butter and whisk in the flour.
    3 Tablespoons butter
  • Cook the flour mixture for 1 minute.

  • Slowly whisk in the vegetable stock, then the beef stock.
    1 cup vegetable stock, 1 cup beef stock
  • Whisk until the mixture comes back up to a bubble.
  • Whisk in the heavy cream, bring back up to a bubble to thicken.
    1 cup heavy cream
  • Serve over mashed potatoes.
