Ingredients

  • 3 ounces red strawberry or cherry Jell-O 1 packet
  • 3 ounces green lime Jell-O 1 packet
  • 1 cup sweetened condensed milk divided (½ cup per color)
  • 3 cups finely grated sweetened coconut divided (1½ cups per color)

Instructions

Make Red Mixture:

  • Add the red Jell-O powder to a medium bowl.
    3 ounces red strawberry or cherry Jell-O
  • Stir in ½ cup sweetened condensed milk until the mixture looks evenly coated and crumbly.

  • Add 1½ cups finely grated coconut and mix until a soft dough forms.
    3 cups finely grated sweetened coconut
  • Chill for 20 to 30 minutes until firm enough to roll.

Make Green Mixture:

  • In another bowl, combine the green Jell-O with ½ cup sweetened condensed milk.
    3 ounces green lime Jell-O
  • Add the remaining 1½ cups finely grated coconut and stir until combined.
  • Chill for 20 to 30 minutes until firm enough to roll.

Form the Balls:

  • Using a small cookie scoop or spoon, scoop portions of each color. Roll between your palms to form smooth balls - about the size of a walnut.
  • Roll in extra coconut for a snowy look.
  • Refrigerate for at least 30 minutes to set.
