Use an apple corer to remove the center of each apple. Then peel each apple.
3-4 large apples
Slice each apple into 8-10 slices.
Add apples, sugar, brown sugar, and cinnamon to a saucepan. Cook over medium-high heat, stirring constantly until the apples begin to break down. This will take about 5-8 minutes.
½ cup sugar, ½ cup brown sugar, 1 teaspoon cinnamon
In small mixing bowl, combine the cornstarch and water. Whisk together until the mixture is smooth and there are no clumps. It will be hard at first.

Reduce heat of the apples and add in cornstarch mixture. Stir constantly for another 2 minutes or until the cornstarch mixture is fully mixed in and thickens the filling.
Remove from heat and allow to cool completely before using.
