- 2 pounds bone-in skin-on chicken thighs (about 4–6 thighs)
- 1 Tablespoon soy sauce
- 1 Tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon Italian seasoning optional
Prepare the chicken
Pat the chicken thighs dry with paper towels. Dry skin helps the chicken get crispy in the air fryer. Place the chicken thighs in a bowl.

Add the soy sauce and olive oil and toss to coat.

Season the chicken
In a small bowl, combine paprika, garlic powder, onion powder, salt, pepper, and Italian seasoning.

Sprinkle the seasoning mixture evenly over the chicken thighs and rub it into both sides.
Air fry
Preheat the air fryer to 380° F for about 3 minutes.
Place the chicken thighs skin side down in the air fryer basket in a single layer.
Cook for 10 minutes. Flip the chicken so the skin side is up and cook another 6–10 minutes until the skin is crispy and the internal temperature reaches 165° F.
