- 4 medium russet potatoes about 8 to 10 ounces each
- 1-2 Tablespoons olive oil or avocado oil
- 1-2 teaspoons kosher salt

Scrub the potatoes clean and dry them very well with a towel. Dry skin helps them crisp instead of steam. Use a fork to prick each potato several times. Rub lightly with oil, then sprinkle generously with kosher salt and a little pepper if desired.

Place potatoes in the air fryer basket with space between them for airflow. Cook at 400° F.
Use this timing guide based on size: Small potatoes, about 6 to 7 ounces, cook about 35 to 40 minutes. Medium potatoes, about 8 to 10 ounces, cook about 40 to 50 minutes or large potatoes, 11 to 14 ounces, cook about 50 to 60 minutes.
The potatoes are done when a knife slides in easily or the internal temperature reaches about 205 to 210° F. (Flipping halfway through cooking is optional, most air fryers cook evenly without turning.)
Optional Steakhouse Method
For extra fluffy and evenly seasoned potatoes, slice each potato open and scoop the flesh into a bowl. Mix with butter, salt, and pepper, then spoon back into the skins before serving.
- Pick the right potatoes - Russets have a thicker skin that crisps better and a starchier interior that turns fluffy.
- Check for doneness - Some air fryers run hotter than others, especially smaller basket styles. Check a few minutes early the first time so you can dial in the timing for your machine.
- Adjust the timing - If the skin is not as crisp as you want, add another 1-2 minutes at the end of cooking. This firms it up without drying out the inside.
- No wrapping - Do not wrap potatoes in foil in the air fryer. It traps steam and prevents the skin from crisping.
- Don’t double the time - Cooking twice the potatoes don’t mean doubling the time. Air fryer heat the space not the item so as long as they are spaced out, they will cook at about the same rate.
