Crush sandwich cookies in a blender, food processor they resemble coffee grounds. You may need to turn the settings on your blender higher to blend the cookies all the way.
Place crushed cookies into medium-sized mixing bowl. Add softened cream cheese and mix until blended well.
Finished product will resemble a dough.
Place ball of dough between two parchment sheets and roll out. (You can use a rolling pin or just flatten with your hand.)
Tear off dough and begin rolling into 1” ball sizes. Place cheesecake balls onto a cookie sheet.
Place dough balls in refrigerator to chill for about 30 minutes.
While cheesecake balls are chilling, microwave almond bark or candy melts in 30 second intervals until melted. Stir between intervals. Once melted, dip cheesecake balls in melted chocolate, shake excess off and place on parchment paper. (You can use a fork to hold the balls when dipping into the almond bark)
Before the candy sets up, decorate with festive sprinkles of choice!
