Ingredients

  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon granulated sugar
  • ¼ teaspoon Kosher salt
  • ½ cup raisins
  • 4 cups freshly grated carrots
  • 8 ounces pineapple tidbits one small can, drained

Instructions

  • In a large bowl, whisk together mayonnaise, sour cream, granulated sugar, and salt.
    ¼ cup mayonnaise, ¼ cup sour cream, 1 tablespoon granulated sugar, ¼ teaspoon Kosher salt
  • Add in the raisins, carrots, and pineapple. Toss well.
    ½ cup raisins, 4 cups freshly grated carrots, 8 ounces pineapple tidbits
  • Cover with plastic wrap, and refrigerate for at least 30 minutes.
  • Give it another toss before serving. Enjoy!

Notes

Storage: Store leftovers in an airtight container in the fridge for up to 4 days. Because of the mayo and sour cream, this salad does not freeze well.
