20oz.red enchilada sauce2 - 10 oz. cans
4.5ozchopped green chilesdrained
8.2ozpackage flour tortillas6 inch
1 ½cupscheddar cheeseshredded
Instructions
Preheat oven to 375. Spray 13x9-inch baking dish with cooking spray, set aside.
In medium-sized skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, or until thoroughly cooked. Drain. Stir in 1/2 cup of the enchilada sauce and the drained chiles.
Spread another 1/2 cup of the enchilada sauce evenly in baking dish.
Add about ¼ cup of beef mixture to the center of each tortilla and top with 1 tablespoon cheddar cheese and wrap the tortillas tightly around the beef filling, placing them seam side down in baking dish.
Top with remaining the enchilada sauce and sprinkle with remaining cheese.
