My son was off school during the winter break so I needed something for snack time that could also include an activity: helping mom. We created a new recipe for a special snack that is also a healthy option. Here’s the recipe, although it’s so easy, it’s really just assembly.
Take half of a graham cracker and crumble it like you would to make a pie crust. You can leave them in big chunks or grind them to a fine consistency.
Add 2 ounces (about 1/2 of an individual serving cup) of yogurt to the dish. Spread to cover the graham crackers.
Add sliced banana to the top of the yogurt. Variations are endless: apples, peaches, mandarin oranges.
Sprinkle on some blueberries — fresh or dried. Variations could include cranberries or dried cherries.
Top with a few mini marshmallows.

Yummy Yogurt Fruit Parfait Snack
Makes 2 snacks.
Ingredients:
1 graham cracker rectangle (four small graham crackers pieces)
4 ounces vanilla yogurt
1/2 banana
2 Tablespoons blueberries (dried or fresh)
5-10 mini marshmallows
Place two ramekins or small bowls on counter.
Crumble half a graham crackers into small pieces and place in each ramekin. Crush like you would to make a pie crust.
Spread 2 ounces of vanilla yogurt on top of the graham cracker crumbs.
Layer banana slices on top of yogurt.
Sprinkle with blueberries and top with mini marshmallows.
