Apple Cider Bundt Cake

This Apple Cider Bundt Cake is so delicious and easy to make. Using a hot apple cider glaze to soak into the cake as well as apple cider icing on top, it is a flavorful and decadent cozy cake for fall.

Ingredients

Cake

  • 1 white cake mix use a super moist cake mix
  • 3.4 oz. instant vanilla pudding mix
  • 4 eggs
  • ½ cup butter melted
  • 1 cup apple cider

Apple Cider Glaze

  • ½ cup apple cider
  • 3/4 cup powdered sugar

Icing

  • 1 cup confectioner’s sugar
  • 2 Tablespoons apple cider

Instructions

  • Preheat oven to 350
  • Spray the inside of a bundt pan with cooking spray and set it aside.
  • In a medium bowl of an electric mixer or food processor, combine cake mix, vanilla pudding, butter, and apple cider.
  • In a small bowl whisk eggs together on a low speed. Slowly pour eggs into the cake flour mixture, a little at a time, so they don’t curdle.
  • Pour cake batter into a prepared bundt pan.
  • Bake for 40 minutes or until a toothpick interested comes out clean. The top of the cake will be golden brown.
  • While the cake is baking, make the glaze. In a small mixing bowl combine the apple cider and powdered sugar. Whisk to combine.
  • As soon as the cake is out of the oven, while it’s still hot, pour on the apple cider glaze. Let sit for 30 minutes.
  • Invert the cake onto a cake stand or cooling rack and let cool completely.
  • Stir together the confectioner’s sugar and 2 tablespoons apple cider until smooth. Drizzle over the top of the cake.
  • Slice and serve.

Notes

  • Add toppings at the right temperature: The hot glaze is poured over to soak into the cake while the cake is also hot. Icing is then drizzled on top of the cake once it is cooled.
  • While all ingredients for cakes should usually be at room temperature this recipe asks for chilled milk to help cool down the hot cider faster.
  • To prevent your cake from sticking in the bundt pan, thoroughly butter and flour the pan before adding the cake mix. You can use a pastry brush to get into all the cracks.
  • Make sure you pour the apple flavor glaze onto a warm cake rather than once it is cooled, otherwise it won't soak into the sponge properly.
