Cake
- 1 white cake mix use a super moist cake mix
- 3.4 oz. instant vanilla pudding mix
- 4 eggs
- ½ cup butter melted
- 1 cup apple cider
Apple Cider Glaze
- ½ cup apple cider
- 3/4 cup powdered sugar
Icing
- 1 cup confectioner’s sugar
- 2 Tablespoons apple cider
Preheat oven to 350
Spray the inside of a bundt pan with cooking spray and set it aside.
In a medium bowl of an electric mixer or food processor, combine cake mix, vanilla pudding, butter, and apple cider.
In a small bowl whisk eggs together on a low speed. Slowly pour eggs into the cake flour mixture, a little at a time, so they don’t curdle.
Pour cake batter into a prepared bundt pan.
Bake for 40 minutes or until a toothpick interested comes out clean. The top of the cake will be golden brown.
While the cake is baking, make the glaze. In a small mixing bowl combine the apple cider and powdered sugar. Whisk to combine.
As soon as the cake is out of the oven, while it’s still hot, pour on the apple cider glaze. Let sit for 30 minutes.
Invert the cake onto a cake stand or cooling rack and let cool completely.
Stir together the confectioner’s sugar and 2 tablespoons apple cider until smooth. Drizzle over the top of the cake.
Slice and serve.
- Add toppings at the right temperature: The hot glaze is poured over to soak into the cake while the cake is also hot. Icing is then drizzled on top of the cake once it is cooled.
- While all ingredients for cakes should usually be at room temperature this recipe asks for chilled milk to help cool down the hot cider faster.
- To prevent your cake from sticking in the bundt pan, thoroughly butter and flour the pan before adding the cake mix. You can use a pastry brush to get into all the cracks.
- Make sure you pour the apple flavor glaze onto a warm cake rather than once it is cooled, otherwise it won't soak into the sponge properly.
