Red Velvet Cheesecake Balls
These delicious Red Velvet Cheesecake Balls are a sweet bite-sized combination of no bake cheesecake and red velvet cake! They're a super easy to make mini dessert that just perfect for a special treat!
Servings: 28 servings
- 1 box red velvet cake mix
- 1 1/4 cup water
- 1/2 cup vegetable oil
- 3 eggs
- 16 oz cream cheese softened
- 1/2 cup confectioner’s sugar
- 2 Tbsp. heavy cream
- 1 tsp. vanilla extract
Preheat oven to 350º
Prepare red velvet cake according to box directions and bake in a 9x13 pan or a jelly roll pan for easy crumbling.
Bake cake according to direction on box. Let cake cool completely and crumble into tiny pieces. Set aside.
In the bowl of a stand mixer beat the cream cheese and confectioner’s sugar until combined. Add heavy cream and vanilla and mix until stiff peaks form.
Line a large baking sheet with parchment or wax paper.
Using a small cookie scoop, scoop cream cheese mixture into balls and place on prepared baking sheet. Chill this pan in the freezer for one hour.
Remove from freezer and roll cheesecake balls in red velvet crumbs until they are completely covered.
Refrigerate until ready to serve.
