- 12 ounces vanilla wafers
- 1 1/2 cups pecans
- 3/4 cup powdered sugar
- 1/3 cup unsweetened cocoa
- 1/2 cup light rum
- 3 tablespoons corn syrup
Place vanilla wafers and pecans in a food processor and pulse until they are small crumbs.
Place crumbs in medium-sized mixing bowl and add confectioners’ sugar, cocoa, corn syrup and rum and mix until combined.
Refrigerate for 20 minutes.
Form small, 1-inch balls from the dough and dip them in powdered sugar, cocoa powder, or chocolate sprinkles.
