- 3/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 2 large eggs
- 15 ounces pumpkin puree NOT pumpkin pie filling
- 12 ounces evaporated milk
- 1 unbaked 9-inch pie crust 4-cup volume deep-dish pie shell
Preheat oven to 425
In small mixing bowl combine sugar, cinnamon, salt, and pumpkin pie spice.
In large mixing bowl, beat eggs and stir in pumpkin and sugar-spice mixture.
Gradually stir in evaporated milk.
Pour into pie shell.
Bake at 425° for 15 minutes.
Cover edges of pie with aluminum foil.
Reduce temperature to 350° and bake for 40 minutes or until knife inserted near center comes out clean.
Cool on wire rack for 2 hours.
Top with whipped cream
