Lemon Cake Mix Cookies

Ingredients

Cookies:

  • 15.25 ounce lemon cake mix 1 box
  • 1/3 cup vegetable oil
  • 2 eggs

Glaze:

  • 1 cup confectioners sugar
  • 4 Tbsp milk

Instructions

  • Preheat your oven to 350 degrees. Line a baking sheet with parchment paper
  • Put your mixer on a low speed and mix the boxed cake mix with vegetable oil, and eggs.
  • Use a cookie scoop and put the cookie dough balls spaced out on the baking sheet.
  • Bake in the oven and bake for 8-10 minutes or until the top of the cookies start to crack or the edges start to turn brown. 
  • Once the time has passed, take the cookies out of the oven and put them on a rack to cool.
  • Let rest in the pan for a few moments first though before you move them. Make the glaze at this time by using a whisk to mix the confectioners sugar and milk together.
  • After the cookies have cooled, drizzle the glaze on top.
