Place candy melts in double boiler until melted (this takes a few minutes) *Don't over heat the chocolate or it will become chalky and will be unusable.) ** An alternate method is melting the chocolate in the microwave in 30 second intervals. I prefer the double boiler method as I feel I have more control.
Place the tip of a lollipop stick in the melted chocolate and stick into one marshmallow. Place on cake pop stand to "set up."
Once dry, take the marshmallow stick and dip into chocolate. There are many techniques for this, but I like doing one side at a time. Tap excess off.
Dip marshmallow into sprinkles.
Set on cake pop stand until hardened.
Tips: You can dip the entire marshmallow into the chocolate to cover the entire thing or dip just part. Experiment until you find the desired result.
