Ingredients

  • 1 ½ pounds ground pork
  • 1 yellow onion sliced
  • 3 cloves garlic minced
  • 2 teaspoons fresh ginger grated
  • 12 ounces broccoli slaw or coleslaw package without the dressing
  • ¼ cup low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 1 Tablespoon apple cider vinegar
  • 2 green onions chopped for garnish
  • fresh chopped cilantro for garnish
  • kosher salt to taste
  • black pepper to taste

Instructions

  • Brown the pork in a large skillet over medium-high heat, breaking it up with a wooden spoon or spatula as it cooks. Drain the fat.

  • Add the onions, garlic, ginger, and coleslaw mix. Cook, stirring occasionally, for about 5 minutes.

  • Stir in soy sauce, sesame oil, and apple cider vinegar. Cook for 1 minute more.

  • Divide into bowls and garnish with green onions and cilantro. Salt and pepper to taste.

Notes

Leftovers will store in an airtight container in the fridge for up to 3 days, or in the freezer for up to 3 months. Reheat in the microwave or on the stovetop.
