Lemon Blueberry Fluff

This lemon blueberry fluff salad is bursting with flavor. It’s a light, creamy, and tart dessert loaded with fresh blueberries and full of lemon flavor.

Ingredients

  • 8 ounce cream cheese 1 block
  • ½ cup confectioner's sugar
  • 8 ounces whipped topping thawed
  • 1 lemon juiced
  • ¼ teaspoon lemon extract optional, for extra lemon flavor
  • 3 cups mini marshmallows
  • 18 ounces fresh blueberries
  • fresh lemon zest optional, for garnish
  • sliced almonds for topping optional

Instructions

  • In a large bowl, beat the cream cheese and powdered sugar with a hand mixer on medium-high speed until smooth.
  • Gently fold in the whipped topping, lemon juice, and lemon extract with a rubber spatula until combined.
  • Add the fresh blueberries and marshmallows and continue to fold it all together and coat in the cream mixture.
  • Cover with plastic wrap and place in the refrigerator to chill for 30 minutes to 1 hour.
  • Right before serving, garnish with sliced almonds and fresh lemon zest if desired.
