Ingredients

Banana Bars

  • 1 cup unsalted butter melted
  • 2 cups light brown sugar
  • 1 Tablespoon vanilla extract
  • 2 large eggs room temperature
  • 2 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 2 ripe bananas mashed

Caramel Buttercream

  • 1/2 cup unsalted butter 1 stick, room temperature
  • 2 cups confectioner's sugar
  • ½ teaspoon salt
  • ¼ cup caramel topping
  • teaspoons whole milk

Instructions

  • Preheat the oven to 350°F
  • Coat a 9x13-inch baking dish with non-stick baking spray. Set aside.
  • In a large bowl of a standing mixer, on medium speed, add the butter and brown sugar and mix until creamy.
  • Reduce the speed low speed, and add the vanilla and mix until combined.
  • Begin to add the eggs one at a time, continue to mix on low until well combined.
  • In a medium sized bowl add the flour and salt and whisk to combine.
  • Add the flour mixture to the butter mixture, slowly, mix until well combined.
  • Remove the bowl from the stand mixer and fold in the bananas.
  • Pour the batter into an even layer on the baking pan.
  • Bake for 45 minutes, or until the center is set.

For the Salted Caramel Buttercream

  • In a large bowl of a stand, with a paddle attachment add the butter, sugar, salt, and caramel topping and mix on low-medium until well combined for about 3 minutes.
  • Add the milk and mix for another 2 minutes on low speed.
  • Once the banana bars are cool, top with the buttercream.
