Preheat the oven to 350 degrees.
Rough chop the corned beef. Reserve 1 tbsp of the meat to sprinkle on dip before baking.
8 ounces corned beef
Add the dressing, the cup mayonnaise and cream cheese to a medium bowl and blend using a mixer until fully combined.
1 cup mayonnaise, 2/3 cup Thousand Island dressing, 4 ounces chive and onion cream cheese
Add the cup sauerkraut to the bowl (make sure you have squeezed it dry).
1 cup sauerkraut
Add the chopped meat and 1 ½ cups cheese. Mix by with a large spoon until well blended.
Add the reuben mixture to a cast iron pan and spread evenly. If you don’t have a cast iron pan, spray a baking dish with non-stick cooking spray.
Sprinkle with remaining shredded Swiss cheese, chives and reserved corn beef (optional).
2 teaspoon fresh chives
Bake for 25 minutes or until bubbly and golden. Leave in oven a minute or two longer, under the broiler, to brown cheese further if desired.
Serve immediately with rye crackers for chips of your choice.
