Pecan Pie Brownies

It's like eating a brownie and a pecan pie. These pecan pie brownies are rich and chewy with crunchy pecans on top.

Ingredients

  • 1 box of brownie mix family size plus the ingredients listed on the back of the box
  • 1 cup white sugar
  • 1 ½ cups light corn syrup
  • 4 eggs
  • ¼ cup butter melted
  • 1 ½ tsp vanilla extract
  • 2 cups chopped pecans

Instructions

  • Preheat oven to 350 degrees. Prep a 13x9 inch metal baking pan with nonstick baking spray.
  • Prepare brownies as per the package instructions on the back of the box. Bake at 350 degrees for half of the baking time listed.
  • In a large bowl, use an electric mixer to combine butter, sugar, corn syrup, eggs, and vanilla until completely mixed.
  • Use a large spoon to add the chopped pecans.
  • Remove the brownies from the oven.
  • Spoon the pecan pie mixture on top of the brownies.
  • Use an offset spatula even the top layer of the filling.
  • Return the brownies to the oven.
  • Continue to bake at 350 degrees for 25 to 35 minutes. (The filling will jiggle in the middle as you move the baking pan.)
  • Take out of the oven.
  • Set aside to cool completely and serve.

Notes

  • Use parchment paper on the bottom of the baking dish for less clean-up.
  • For the boxed brownies you can substitute vegetable oil with melted butter at a 1:1 ratio.
  • Substitute milk or heavy cream instead of water at a 1:1 ratio for the brownies for an even richer flavor.
  • You may use maple syrup or honey in place of light corn syrup if you don't have any to hand. Replace 1 cup of white sugar with 3/4 cup maple syrup, 3/4 cup honey, 2/3 cup agave, or 1 tsp stevia.
