Equipment

  • 8 popsicle sticks

Ingredients

  • 4 ripe bananas
  • 12 oz chocolate chips semi-sweet or milk chocolate
  • 2 Tbsp shortening
  • chopped peanuts & sprinkles for decorating

Instructions

  • Peel bananas and cut them in half. Push a popsicle stick into the cut end of each banana half, and place the halves on a large baking sheet covered in wax paper or parchment paper.
  • Cover with plastic wrap and place in the freezer for at least 3 hours. Once the bananas are frozen it is time to dip them in chocolate.
  • Prepare your sprinkles and chopped nuts and place wax paper or parchment on the counter or a small baking sheet ready for the bananas to dip into them.
  • Melt the chocolate chips by placing them in a microwave-safe bowl or mason jar and microwaving them in 15-second increments and stirring in between. Alternatively, you can place a mason jar or glass bowl of chocolate chips with the shortening into a pan of water, so that the water line comes just above the chocolate line but not into the chocolate. Heat the pan over medium heat and stir the chocolate chips occasionally until melted and smooth and set to one side.
  • Remove the bananas from the freezer and dip them one at a time into the melted chocolate, allowing any excess chocolate drip off.
  • Immediately add your toppings: sprinkle with nuts and rainbow sprinkles. Place on wax paper on a large baking sheet to cool completely.
  • Once the chocolate is hardened on these banana treats, you can serve them right away!

Notes

  • Do not use overripe bananas as they will not keep their shape well when you put a popsicle stick in them.
  • To refrigerate: Store in an airtight container or covered in plastic wrap in the refrigerator for up to 3 days.
  • To freeze: Wrap tightly in plastic wrap or put them in a freezer bag and freeze them until ready to serve. Remove from the freezer for 5-10 minutes before eating to soften a bit.
