These delicious Red Velvet Cheesecake Balls are a sweet bite-sized combination of no bake cheesecake and red velvet cake! They're a super easy to make mini dessert that just perfect for a special treat!

Ingredients

  • 1 box red velvet cake mix
  • 1 1/4 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 16 oz cream cheese softened
  • 1/2 cup confectioner’s sugar
  • 2 Tbsp. heavy cream
  • 1 tsp. vanilla extract

Instructions

  • Preheat oven to 350º
  • Prepare red velvet cake according to box directions (using the water, vegetable oil and eggs) and bake in a 9x13 pan or a jelly roll pan for easy crumbling.
  • Bake cake according to direction on box. Let cake cool completely and crumble into tiny pieces. Set aside.
  • In the bowl of a stand mixer beat the cream cheese and confectioner’s sugar until combined. Add heavy cream and vanilla and mix until stiff peaks form.
  • Line a large baking sheet with parchment or wax paper.
  • Using a small cookie scoop, scoop cream cheese mixture into balls and place on prepared baking sheet. Chill this pan in the freezer for one hour.
  • Remove from freezer and roll cheesecake balls in red velvet crumbs until they are completely covered.
  • Refrigerate until ready to serve.
