Strawberry Rhubarb Crumble

This strawberry rhubarb crisp is a delicious dessert that’s perfect for the spring and summer months. A warm and fruity compote that’s the perfect balance of sweet and tart.

INGREDIENTS

– Fresh bright red rhubarb – Fresh strawberries – Granulated sugar – Lemon – Cornstarch – Pure vanilla extract

In a large bowl, combine rhubarb, strawberries, sugar, lemon juice, cornstarch, vanilla extract, and lemon zest.

Combine the flour, brown sugar, and oats in a small bowl. Add the melted butter and mix to combine.

Divide the crumble over the top of each ramekin.

Bake for 20-22 minutes, or until the crumble is golden brown and the fruit layer is hot and bubbly.
