I received a copy of this beautiful cookbook and can’t stop looking at it. The Skinnytaste Cookbook: Light on Calories, Big on Flavor is from Gina Homolka, blogger over at Skinnytaste.com. At the beginning of the book Homolka shares her story of weight loss struggles: being a skinny teen and able to eat anything she wanted to growing up and trying all the fad diets. Ultimately she wanted to learn how to eat healthy food that also tasted good.
As with all cookbooks I own, I skip right to the back for the desserts. Who doesn’t want dessert first? I was anxious to see what she had as skinny desserts. I found these beautiful meringues. I make a similar cookie for Easter each year with the kids, but this one is over the top gorgeous.
