You can certainly swap the canned chicken for rotisserie chicken, but I would keep the cream cheese the same. It will still cook with one block instead of two, but won’t be as thick or creamy.

I’ll never make buffalo chicken dip with canned chicken again. It just felt like I was eating warm buffalo cream cheese. Definitely not enough chicken.

You can really use any size you like of the canned chicken. If you use more, it will be a thicker “dip.”

Great question, and yes, it will still turn out. Stirring just helps everything melt together a little more evenly, but the dip will cook just fine without it. When you get back, just give it a good stir before serving to smooth everything out. Enjoy the dip!
